Featured Recipe of the Month: Smoked Sirloin

Smoked sirloin is the perfect balance of bold, beefy flavor and juicy tenderness. It’s a great choice when you want a steakhouse-quality cut but with the deep, smoky character of barbecue. Ingredients for Smoked Sirloin:

  • 2-3 sirloin steaks (or a sirloin roast)
  • 2 tbsp coarse salt
  • 1 tbsp coarse black pepper
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika (optional)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Wood for smoking (hickory, oak, or mesquite)

 

Instructions:

1. Prep the Sirloin

  • Pat the sirloin dry with paper towels.
  • Rub the meat with olive oil to help the seasoning stick.
  • Mix salt, pepper, garlic powder, and smoked paprika (if using), then coat the sirloin evenly.

 

2. Fire Up the Smoker

  • Set your smoker to 225°F.
  • Use hickory, oak, or mesquite wood for a strong, smoky flavor.
  • Place the sirloin directly on the smoker grates.

 

3. Smoke the Sirloin

  • Smoke the meat for about 45 minutes to 1 hour, or until the internal temperature reaches:
    • 120°F for rare
    • 130°F for medium-rare
    • 140°F for medium

 

4. Reverse Sear for the Perfect Crust

  • Remove the sirloin from the smoker and let it rest while you heat up a cast iron skillet or grill to high heat.
  • Sear the meat for 1-2 minutes per side, basting with butter for extra richness.

 

 

5. Rest and Serve

  • Let the smoked sirloin rest for 10 minutes before slicing.
  • Slice against the grain for the most tender bite.
  • Serve with classic BBQ sides like smoked mac and cheese, grilled asparagus, or garlic mashed potatoes.
