BrownCow Tech’s Smoked Thanksgiving Turkey Recipe
Ingredients for Smoked Turkey:
- 1 whole turkey (12-14 lbs)
- 1/4 cup mustard (to bind)
- Your favorite poultry rub
- 1/4 cup melted butter
- 2 tablespoons dried rosemary
- 2 tablespoons dried thyme
- 1 apple, quartered
- 1 onion, quartered
- 1 lemon, quartered
- 2 cups apple cider (for spritzing)
1. Preparation:
- Thaw and Prep: If your turkey is frozen, make sure it’s fully thawed before smoking. This can take 3-4 days in the refrigerator.
- Remove Excess Moisture: Pat the turkey dry with paper towels to remove excess moisture. This helps the rub adhere better.
- Seasoning Binder: Rub the entire turkey with mustard. The mustard acts as a binder for your seasoning and won’t impact the flavor after cooking.
- Season Generously: Use your favorite poultry rub, covering the outside, inside the cavity, and under the skin where possible. This ensures deep flavor throughout.
2. Stuff the Turkey:
- Flavor from the Inside: Place the apple, onion, and lemon quarters inside the cavity. These aromatics help add subtle flavors to the turkey while it smokes.
3. Smoking:
- Preheat the Smoker: Set your smoker to 225°F. A lower, steady heat will ensure the turkey cooks evenly and absorbs the smoky flavor well.
- Smoking Process: Place the turkey in the smoker, breast side up. Insert a meat thermometer into the thickest part of the breast without touching the bone. Smoke the turkey at 225°F.
- Spritz Regularly: Spritz the bird with apple cider every hour to maintain moisture and develop a slightly sweet flavor.
- Cooking Time: Smoke the turkey until the internal temperature reaches 165°F in the breast and 175°F in the thickest part of the thigh. This can take anywhere between 6-7 hours for a 12-14 lb turkey, depending on the consistency of your smoker.
4. Butter Glaze:
- Add Flavor Midway: Halfway through cooking, brush the turkey with a mixture of melted butter, rosemary, and thyme. This helps achieve a crispy, golden skin and enhances the herbaceous flavor of the turkey.
5. Resting:
- Let It Rest: Once the internal temperature reaches the correct level, remove the turkey from the smoker. Let it rest for 30-45 minutes, tented loosely with foil. Resting is crucial to allow the juices to redistribute, resulting in a juicy turkey.
6. Carving:
- Carve and Serve: After resting, carve the turkey—starting with the legs and wings, then moving to the breast. Serve with your favorite Thanksgiving sides, and enjoy the rich, smoky flavors with your friends and family.
