BrownCow Tech’s Smoked Tenderloin Bean Soup Recipe
Ingredients for Smoked Tenderloin:
- 1 pork tenderloin
- Your favorite pork rub seasoning
- Mustard (for binding the seasoning)
- Kinder BBQ sauce (for the perfect glaze)
Ingredients for the Bean Soup:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups chicken broth
- 2 cups water
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
Prepare the Tenderloin:
- Coat the tenderloin with mustard to bind the seasoning.
- Generously apply your favorite pork rub, making sure the tenderloin is well-covered.
- Smoking:
- Preheat your smoker to 225°F.
- Place the tenderloin in the smoker and let it cook until it reaches an internal temperature of 145°F (about 2 hours).
- Brush the tenderloin with Kinder BBQ sauce halfway through cooking to create a beautiful, flavorful glaze.
- Rest the Tenderloin:
- Remove the tenderloin from the smoker and let it rest for 10-15 minutes. *This step is crucial for keeping it juicy and tender.
- Make the Bean Soup:
- In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 8-10 minutes, until the vegetables are softened.
- Stir in the minced garlic and cook for another minute.
- Add the white beans, chicken broth, water, bay leaf, and dried thyme. Bring to a simmer and cook for about 20 minutes.
- Once the soup is simmering, slice the smoked tenderloin and add it to the pot. Let the soup continue cooking for another 10-15 minutes, allowing the flavors to meld together.
- Season with salt and pepper to taste.
- Serving:
- Serve the soup hot, garnished with fresh herbs if desired. *This hearty dish pairs perfectly with crusty bread and a simple side salad.
